Easy peasy mayonnaise recipe.

This recipe tastes great and is so easy to make. As I can’t eat eggs, I sometimes find it hard to get hold of vegan mayonnaise from the smaller stores when I run out, so this is a great way to fix that problem! It’s also better for the environment as it means you don’t have an empty jar at the end and a lot cheaper than your store bought alternative.

All you need is 4 ingredients, that you are bound to already have:

  1. 125ml (half a cup) milk

  2. 250ml (1 cup) sunflower oil

  3. 2 tsp apple cider vinegar

  4. 1/2 tsp salt

Then simply put all the ingredients in a jug and blend with a stick blender until the mixture thickens. Keep blending until you get the consistency you want. This should last for around 4 days in the fridge!
